- Halve Large eggs lengthwise. Remove yolks and mash; stir in mayonnaise, mustard, and 1/8 tsp. salt. Stuff egg whites with yolk mix. Arrange egg halves in a 10x6x2 inch baking dish. Cook onion and green pepper in 2 tbsp.
- butter until tender. Stir in flour, sugar, 1/2 teaspoon salt, and dash of pepper. Add in undrained tomatoes and bay leaf. Cook and stir until bubbly.
- Cook and stir 2 min more. Remove bay leaf; pour over Large eggs. Toss together crumbs and 1 tbsp. melted butter; sprinkle atop. Bake in a 350F oven about 25 min. Let stand 5 - 10 min.
