- Preheat oven to 350 F. In a large bowl, combine the Large eggs, all of the cheeses, and the butter and mix well. Stir in the spinach and nutmeg.
- Divide the mix into greased 8-inch ramekins and bake for 30 to 45 min, or possibly till a tester inserted in the center comes out clean. Ladle 1 1/2 Tbsp. of the Creamy Cheese Sauce over each ramekin and serve.
- YIELD: 8 SERVINGS
- Creamy Cheese Sauce:In a medium-sized saucepan, heat the butter. Stir in the flour and cook, stirring constantly, for 3 to 5 min. Add in the lowfat milk and cook, stirring constantly, till the sauce begins to thicken and bubble. Stir in the cheese and seasonings and cook till the cheese is melted.
