Eggplant Corn Casserole

Ингредиенты

  • 1 med. eggplant
  • 1 stick butter
  • 1 can cream style corn (or possibly corn sliced from cob & 1/4 c. lowfat milk & 1 teaspoon flour)
  • 1 sm. minced onion
  • 1 minced bell pepper
  • 1 c. cracker crumbs
  • 1 egg, beaten
  • 1 sm. jar pimentos, minced
  • 2 1/2 c. grated cheese

Инструкции

  1. Cook eggplant in boiling water for 10 min, then drain. Mash and add in butter. Add in the other ingredients, reserving 1 1/2 c. cheese for topping. Bake at 350 degrees for 1 hour. Add in reserved cheese, return to oven; bake till cheese is melted. (This is one of the few casseroles which Billy Ray likes.)
