Ингредиенты

  • 3 Tbsp. Extra virgin olive oil
  • 3 x Cloves Garlic, chopped
  • 1 lrg Eggplant, peeled and diced
  • 1 Tbsp. Water
  • 1 c. Seasoned Bread Crumbs
  • 1/2 c. Fresh Parsley, minced
  • 2 x Large eggs, beaten
  • 1/2 c. Grated Cheese Extra virgin olive oil Marinara Sauce Mozzarella Cheese

Инструкции

  1. In large saucepan, heat oil and gently saute/fry garlic till golden. Add in diced eggplant, water, and cover. Reduce heat and gently steam till eggplant is very soft. In mixing bowl, combine eggplant, bread crumbs, parsley, Large eggs and cheese. Mix well and let stand 20 min. Form into balls and fry on all sides in extra virgin olive oil.
