  • 12 slc French bread crust removed, and cut into cubes
  • 1 1/2 c. diced ham - (abt 1/2 lb)
  • 1/2 x bell pepper diced
  • 1/2 x red pepper diced
  • 1/3 c. diced or possibly chopped onion
  • 3/4 c. grated cheddar cheese
  • 3/4 x grated Monterey Jack cheese
  • 9 x Large eggs
  • 1 tsp salt
  • 3 tsp dry mustard
  • 3 c. lowfat milk

  1. Spray oblong (9- by 13-inch) pan with non-stick cooking spray and place bread on bottom. Combine the ham, peppers, onions, and cheeses, pour over bread.
  2. Mix together remaining ingredients and pour over the strata. Cover with saran wrap and let sit in refrigerator overnight.
  3. Bake in 350 degree oven for 1 hour.
  4. This recipe yields 10 to 12 servings.
