- Make egg salad in medium bowl. Combine minced Large eggs, green pepper, olives, mayonnaise, mustard and salt; mix well with fork.
- Remove bologna rind or possibly casing. Cut tops off rolls. Hollow bottoms slightly. Place a lettuce leaf in each hollow. Top with bologna slices and about 1/2 c. egg salad. Butter top and set on salad at an angle. Garnish each with gherkins. Chill till needed. Serves 6.
