Рецепт Egg Kurma
Ingredients:
- Eggs - 2, boiled, shell removed, pricked or scored
- Tomato - 1, chopped
- Small Onions (Sambar Onions) - 1/2 cup, peeled
- Onion - 1, big, chopped
- Green Chillies - 3
- Ginger - 1/2 inch piece, peeled
- Garlic - 5 cloves
- Cinnamon - 2 sticks
- Cloves - 2
- Mustard Seeds - 1/4 tsp
- Peppercorns - 1/4 tsp
- Cumin Seeds - 1/4 tsp
- Urad Dal - 1/2 tsp
- Coriander Seeds - 1/2 tsp
- Saunf - 1/4 tsp
- Coconut - 1/2 cup, grated
- Roasted Gram - 1 tsp
- Curry Leaves - handful
- Coriander Leaves - handful
- Turmeric Powder - 1/4 tsp
- Salt as per taste
- Oil - 3 tsp
Method:
1. Heat 1 tsp oil in a pan.
2. Saute the ginger, garlic, small onions, cinnamon, cloves, coriander seeds, roasted gram, green chillies, peppercorns, cumin seeds, saunf and coconut for a minute.
3. Remove and grind together to a fine paste.
4. Heat the remaining oil in the pan.
5. Fry the mustard seeds and urad dal for 30 seconds.
6. Saute the onions, tomatoes and curry leaves for 2 to 3 minutes.
7. Add the ground paste, turmeric powder and salt.
8. Mix well.
9. Pour 2 cups of water and bring to a boil.
10. When it starts to thicken, add the eggs and cook for 2 minutes.
11. Garnish with coriander leaves.
12. Serve hot with rice or roti.
