Egg Fried Rice with Ginger Recipe
A simple and delicious fried rice with egg and ginger.
Ingredients:
- Basmati Rice – 5 to 6 cups, cooked
- Eggs – 4, medium, beaten
- Spring Onions – 2 bunches, chopped
- Green Peas – 2 cups, shelled (thawed if frozen)
- Cabbage – 1 cup, chopped
- Green Capsicum – 1 cup, chopped (optional)
- Soy Sauce – 5 to 6 tblsp
- Ginger – 2 tblsp, minced
- Oil – 1 to 1 1/2 tblsp
- Salt as per taste
Method:
1. Heat 1/2 tblsp oil in a pan over medium flame.
2. Add the eggs and cook until well scrambled.
3. Remove and keep aside.
4. Add the remaining oil.
5. Add the ginger and spring onions.
6. Cook for a minute or two.
7. Add the peas, cabbage, capsicum and cooked rice.
8. Stir well and cook for 3 to 5 minutes.
9. Add the soy sauce and eggs.
10. Mix well and cook for 2 to 3 minutes more.
11. Remove and serve.
