  • 12 ounce frzn shelled sweet soybeans (edamame)
  • 2 bag baby lettuce mix - (4 ounce ea)
  • 1 x Fuji apple peeled, cored, and thinly sliced
  • 1/4 c. golden brown raisins
  • 3 Tbsp. soy sauce
  • 2 Tbsp. fresh lime or possibly lemon juice (optional)
  • 1 Tbsp. vegetable oil

  1. Cook soybeans in boiling water according to package directions. Drain and cold. In large bowl, combine lettuce, apple slices and golden brown raisins.
  2. In small bowl, mix together soy sauce, lime or possibly lemon juice and oil. Drizzle over salad, and serve.
  3. This recipe yields 4 to 6 servings.
  4. Comments: If you have a big appetite, serve this colorful salad with quick-cooking brown rice and marinated, baked tofu slices. Linger afterward over biscotti and green tea.
