Eating the Alphabet Healthy Recipe Challenge~ This month our letters are K-L~

This month we'll again feature fruit, vegetable, bean or grain ingredients starting with the letters G-H. To share and collect new recipe ideas with each other and our readers that feature fruits, vegetables, grains or legumes starting with different letters of the alphabet each month. This is a time to get creative and try a new ingredient you're not familiar with or perhaps share a family favorite that you know is a winner! Savory, sweet or in between....that's up to you!

This month the letters of the Alphabet are K-L. I have decided on the letter L. L for Lentils~ I love lentils and use them often in soups, stews and as a side dish~ Give this yummy soup a try...you'll love it:)

In a large saucepan, bring lentils and chicken broth to a boil. Reduce the heat, simmer for 30 minutes.

Meanwhile in a skillet saute' onion, garlic, celery in oil until vegetables are tender. Add to saucepan. Add tomatoes, carrots, thyme and marjoram. Cook fro 30 minutes or longer or until lentils are tender.

Serve with a dollop of sour cream and sprinkle with crushed red pepper, if desired.
