.%3C/p%3E%3Cp%3ETo%20start%20off,%20pour%20a%20couple%20glasses%20of%20the%20Cab%20wine%20(one%20for%20your%20significant%20other%20and%20one%20for%20yourself)%20and%20let%20sit%20at%20the%20place%20setting%20where%20dinner%20will%20be%20served%20to%20decant%20in%20the%20glass%20while%20you%20prepare%20the%20appetizer%20(this%20will%20let%20the%20wine%20breathe%20for%20a%20little%20while%20and%20usually%20is%20a%20technique%20to%20enhance%20the%20drinking%20enjoyment%20of%20the%20wine).%3C/p%3E%3Cp%3EFor%20the%20appetizer%20preparation,%20first%20pre-heat%20the%20oven%20to%20around%20300%20degrees.%20%20slice%20a%20fresh%20tomato%20into%20even%20slices%20about%201/4%22%20to%203/8%22%20thick.%20%20Next,%20slice%20a%20fresh%20mozzarella%20block%20of%20cheese%20such%20that%20even%20nice%20squares%20are%20cut%20at%20around%20the%20same%20thickness%20as%20the%20tomatoes.%20%20Place%20the%20tomatoes%20on%20a%20cookie%20sheet%20with%20aluminum%20foil%20covering%20it.%20%20Space%20the%20tomatoes%20evenly%20and%20then%20place%20the%20slices%20of%20mozzarella%20on%20top%20of%20the%20tomatoes%20-%20one%20for%20each%20tomato%20slice.%20%20Lastly,%20coarsely%20chop%20up%20some%20cilantro%20or%20parsley%20for%20garnish%20and%20sprinkle%20on%20top%20of%20each%20location%20of%20tomato%20+%20mozzarella%20slice.%20%20Place%20the%20cookie%20sheet%20in%20the%20oven%20and%20let%20bake%20for%20about%205-10%20minutes%20or%20just%20until%20the%20mozzarella%20starts%20melting%20over%20the%20tomatoes%20onto%20the%20aluminum%20foil.%20%20Take%20out%20the%20cookie%20sheet%20and%20scoop%20two%20or%20three%20tomatoes%20onto%20a%20small%20plate%20and%20serve!%20%20This%20goes%20very%20nicely%20with%20the%20wine%20and%20is%20a%20very%20light%20but%20satisfying%20at%20the%20same%20time!%20%20This%20was%20the%20easy%20part%20for%20me....%3C/p%3E%3Cp%3EThe%20main%20dish%20is%20basically%20an%20elegant%20version%20of%20Macaroni%20and%20Cheese%20but%20it%20is%20oh%20so%20savory!%20%20This%20main%20dish%20preparation%20was%20the%20tough%20part%20for%20me.%20%20It%20certainly%20gave%20me%20an%20even%20higher%20level%20of%20appreciation%20for%20the%20true%20talent%20that%20my%20lovely%20little%20wifey%20has%20in%20the%20kitchen%20for%20sure!%20%20You%20might%20find%20some%20of%20my%20boo-boos%20during%20this%20meal%20preparation%20as%20indicative%20of%20my%20novice%20cooking%20skills;%20and%20you%20would%20be%20correct!%20Haha%3C/p%3E%3Cp%3ETo%20prepare%20the%20main%20course,%20start%20off%20by%20boiling%20at%20least%205%20or%20so%20quarts%20of%20water%20in%20a%20large%20enough%20stove%20top%20pot%20to%20get%20ready%20to%20cook%20the%20shells.%20%20Add%20salt%20to%20the%20water%20to%20help%20it%20boil%20faster%20and%20for%20taste.%20%20Once%20the%20water%20reaches%20a%20boil,%20add%20the%20shells%20and%20let%20cook%20for%20about%208-10%20minutes.%20%20BE%20VERY%20CAREFUL%20HERE.%20%20Haha,%20yes%20I%20boiled%20the%20shells%20for%20too%20long%20and%20went%20well%20past%20the%20desired%20'Al%20Dente'%20cooking%20texture%20to%20prepare%20for%20the%20next%20step%20in%20the%20shells'%20journey!%20%20OOPS...%3C/p%3E%3Cp%3ELocate%20a%20saucepan%20and%20melt%203%20tablespoons%20of%20butter%20on%20low%20to%20medium%20stovetop%20heat.%20%20Next,%20stir%20in%20the%20flour.%20%20You%20will%20likely%20notice%20as%20I%20did%20that%20the%20flour%20overwhelms%20the%20small%20amount%20of%20butter%20and%20so%20the%20butter%20starts%20to%20clump%20into%20little%20balls%20quickly%20and%20the%20saucepan%20is%20mostly%20just%20dry%20flour%20at%20this%20point.%20%20Stir%20in%20the%20milk%20and%20chicken%20broth%20at%20this%20point%20to%20get%20things%20going%20a%20little%20more%20smoothly.%20%20Stir%20the%20mixture%20during%20the%20time%20it%20is%20simmering.%20%20Continue%20to%20cook,%20stirring%20until%20thickened%20and%20bubbly.%20%20Stir%20in%20the%20parmesan%20cheese%20and%20continue%20to%20stir%20until%20the%20cheese%20is%20melted.%20%20It%20starts%20smelling%20and%20looking%20pretty%20awesome%20at%20this%20point!%20%20Once%20the%20shells%20are%20done,%20drain%20well%20and%20add%20back%20to%20the%20big%20pot%20you%20cooked%20them%20in.%20%20Next,%20add%20the%20sauce%20from%20the%20saucepan%20into%20the%20pot%20with%20the%20shells.%3C/p%3E%3Cp%3EMix%20all%20of%20it%20together%20well%20and%20transfer%20to%20a%20lightly%20buttered%20standard%20casserole%20dish.%20%20Sprinkle%20the%20bread%20crumbs%20over%20the%20top,%20and%20also%20sprinkle%20the%20chopped%20cilantro%20or%20parsley%20over%20the%20top%20as%20well.%20%20Now,%20at%20this%20point,%20I%20decided%20to%20take%20what%20was%20left%20over%20from%20my%20appetizer%20tomato%20and%20dice%20up%20an%20amount%20to%20sprinkle%20on%20top%20of%20the%20dish%20as%20well%20-%20this%20I%20think%20could%20be%20done%20as%20option%20however.%20%20Bake%20the%20dish%20at%20325%20degrees%20for%2025-30%20minutes,%20or%20until%20hot%20and%20bubbly.%20%20Serves%204-6%20people.%3C/p%3E){kind=link}
