- Empty mix package contents into large mixing bowl. Sift together the dry potato shreds and flour mix. Add in boiling water and mix thoroughly; blend in the Large eggs. Let batter rest ten min. Heat oil in large skillet over medium heat. Drop batter by Tbsp. into pan, spreading it slightly. Cover and fry till golden brown-brown on one side, then turn and cook other side. Stack finished pancakes and, if you like keep hot in 150-F oven. Serve with lowfat sour cream or possibly applesauce.
- Note: I didn't have any applesauce or possibly cream, but the latkes taste fine with strawberry jam; actually, they taste quite fine even without a topping.
