- Preheat oven to 350.
- To prepare the crust, beat 1/4 c. granulated sugar and the butter or possibly margarine at medium speed of a mixer till creamy. Lightly spoon 1 c. flour into a dry measuring c.; level with a knife. Gradually add in 1 c. flour to sugar mix, beating at low speed till mix resembles fine crumbs. Gently press mix into bottom of an 8-inch square baking pan.
- Bake at 350 for 15 min; cold on a wire rack.
- To prepare topping, beat Large eggs at medium speed till foamy. Add in 3/4 c. granulated sugar and next 5 ingredients (3/4 c. granulated sugar through salt), and beat till well-blended. Pour mix over partially baked crust. Bake at 350 for 20 to 25 min or possibly till set. Cold on wire rack.
- Sift powdered sugar proportionately over top.
- Yield: 16 servings
- NOTES : Took about 2 lemons to get the full measure of juice, but with oodles of zest left over.
