These unusual looking fruit never caught my fancy till I first saw the skinned and sliced Kiwi fruit! Beauty wrapped in a dirty gift wrap.. Many still brush them aside as a potato with a weird hairdo or a Chikoo fruit gone berserk

I am in love with these tiny exotica packed with more vitamin C than our humble orange! Barring the ugly exterior the fruit is extremely beautiful and quite dramatic from inside. Speckled with tiny black & crunchy seeds and a color which will put any paint company go insane!

Left to myself I would love to eat them as it is and never bake or cook anything with them. The sweet & sour taste is so unique of these fruits. Just wanted to experiment how a Kiwi fruit muffin will look and taste. And as expected they came out flavorful and scrumptious, besides giving the muffins a lovely color and speckled texture.

Nature at its best!

Ingredients;

(12 small sized Muffins)

Assembly line for the baking..

Method: Grease a muffin tray with oil or use paper cups. Preheat the oven at 180°C for 10 minutes.

Peel and mash the Kiwi fruit and the Banana. Sift the flours, baking soda and baking powder together.

Take another vessel and add the sugar, Vanilla essence, yogurt and the oil into it. Beat it lightly till it is well mixed.

Add the mashed fruits into the liquid mix and mix well.

Hot from oven.. looks cute!

Add the flour mix into the wet ingredients above. Mix it gently for just about 7-8 light strokes till the flour is almost mixed. Do not worry about the lumps in the mixture.

Pour the batter in the greased muffin moulds and bake for about 20 minutes or till done. Check the muffins by inserting a knife or a toothpick. If there is no batter left on it the muffins are done.

Yumm...and tasty too!

Cool the Muffins completely on a wire rack and take them out. Decorate with any frosting of your choice and serve.

I like to bake my goodies in small quantities unless there is a need. Which ensures that they remain in good demand always! The only regret being that I am left with none, within a few minutes of baking to decorate or frost them for the photo shoot for my blog

Notes:

Honey as a substitute to sugar gives a much flavorful muffins.

Add 1-2 drops of food grade green color if you like a fancy muffin with green tint.
