- 1.25 c. Crushed Graham Crackers
- ~ 2 T. Margarine (I use the generic of Smart Balance Light with Omega 3s)
- ~1/4 c. Sugar
- 1 lb. Cream Cheese ( I use the kind in the pic above--Fat Free that is the store brand. Cheaper and also fat free, which is awesome! :)
- 3 Eggs
- 1 tsp. Vanilla
- 1 little packet of Starbucks Via (any variety you like, or you could use about 1 T. of other instant coffee.)
- 2.5 T. Cocoa (I use Hershey's.)
- 1/2 c. Sugar

%20Chocolaty%20Coffee%20Cheesecake%20recipe%20for%20you!%20%20(And%20me...%20;)%20)%20%20Don't%20worry%20if%20you%20don't%20have%20a%20spring-form%20pan.%20%20I%20don't,%20so%20I%20made%20due%20with%20what%20I%20had.%20%20You%20could%20also%20do%20this%20in%20a%20spring-form%20pan%20though.%3C/p%3E%3Cp%3EHere's%20my%20recipe:%3C/p%3E%3Cp%3ECrust:%3C/p%3E%3Cp%3E1.25%20c.%20Crushed%20Graham%20Crackers%3C/p%3E%3Cp%3E~%202%20T.%20Margarine%20(I%20use%20the%20generic%20of%20Smart%20Balance%20Light%20with%20Omega%203s)%3C/p%3E%3Cp%3E~1/4%20c.%20Sugar%3C/p%3E%3Cp%3E1.%20Mix%20these%20ingredients%20together%20either%20in%20a%20food%20processor%20or%20the%20Bullet%20Express%20with%20Meal%20Mixer%20like%20I%20did.%3C/p%3E%3Cp%3E2.%20Put%20in%20bottom%20of%20pan%20you%20are%20using%20and%20press%20down%20firmly%20with%20your%20fingers.%20Then%20grab%20a%20glass%20and%20make%20sure%20it%20is%20evenly%20pressed%20down%20around%20the%20whole%20bottom%20of%20the%20pan.%20(You%20can%20use%20a%20Spring-form%20pan,%20or%20use%20something%20you%20have.%20I%20used%20this%20small%208%20or%209%22%20pan%20with%20a%20bottom%20that%20pops%20out.)%3C/p%3E%3Cp%3ECheesecake%20Filling:%3C/p%3E%3Cp%3ESee%20instructions%20below:%3C/p%3E%3Cp%3E1.%20%20In%20your%20Bullet%20Express%20(or%20Food%20Processor)%20using%20the%20meal%20mixer%20combine%20the%20cream%20cheese%20and%20eggs.%20%20Mix%20on%20low%20until%20blended%20or%20about%2020%20seconds.%3C/p%3E%3Cp%3E2.%20%20Next%20add%20the%20rest%20of%20the%20ingredients%20(vanilla,%20cocoa,%20coffee,%20and%20sugar)%20and%20mix%20until%20blended%20again.%3C/p%3E%3Cp%3E3.%20%20Pour%20the%20chocolatly%20mixture%20into%20the%20pan%20with%20the%20crust%20in%20the%20bottom.%3C/p%3E%3Cp%3E5.%20%20Turn%20the%20oven%20off%20and%20open%20the%20door.%20%20Let%20the%20cake%20stay%20in%20there%20for%20about%2030minutes%20while%20it%20starts%20to%20cool.%20%20Then%20take%20it%20out%20and%20cut%20around%20the%20sides%20of%20the%20pan.%3C/p%3E%3Cp%3EDrizzle%20some%20chocolate%20on%20top%20for%20a%20finishing%20touch%20if%20you%20would%20like%20and%20bon%20appetit'!%20%20Enjoy!%20%20:)%3C/p%3E%3Cp%3EI%20know%20mine%20didn't%20turn%20out%20perfectly...I%20probably%20got%20it%20out%20of%20the%20pan%20a%20little%20early...but%20it%20will%20taste%20delicious%20so%20that's%20good%20enough%20for%20me!%20%20Plus%20it's%20practically%20fat%20free%20and%20was%20super%20easy%20to%20make!%20%20:)%20%20Have%20fun%20in%20your%20kitchen!%3C/p%3E%3Cp%3EAlright,%20I%20had%20to%20eat%20a%20piece.%20%20I%20liked%20it%20too...I%20knew%20I%20would.%20%20I%20used%20a%20graham%20crust%20--%20instead%20of%20oreo%20--%20so%20it%20wouldn't%20be%20too%20rich.%20%20I%20also%20like%20that%20the%20filling%20isn't%20inches%20and%20inches%20thick,%20it's%20all%20around%20an%20inch%20thick.%20%20The%20texture%20isn't%20quite%20the%20normal%20creamy%20cheesecake%20style,%20but%20that's%20what%20we%20get%20for%20eliminating%20the%20fat%20almost%20completely!%20%20:)%20%20I%20think%20you'll%20enjoy%20it%20too...%3C/p%3E){kind=link}
