- Cook onion in 1 Tbsp. of the butter till wilted. Add in potatoes, bouillon and sufficient water just to cover. Boil gently just till potatoes are cooked.
- (Be careful to not scorch.) Don't overcook till potatoes are mushy. Don't drain after cooking.
- Cook bacon while potatoes are simmering. Crumble.
- Dice the cheese and stir into the warm potatoes till melted. Add in the lowfat sour cream and remaining butter. Stir together till combined.
- Taste for salt. Top with freshly grnd pepper and crumbled bacon.
- Garnish with snipped chives if you like.
