I know baking a cobbler in the heat of August isn't the smartest idea, but it sure is a yummy one. I can't help myself, because all my favorite fruits to make cobbler are summer fruits, peaches, blackberries and blueberries.

I just don't think you can't go through summer without enjoying some type of cobbler, at least not here in the south. By far Peach is my favorite cobbler, but this new Blueberry Muffin Cobbler comes in a close second.

I chose to bake up this beautiful cobbler on a day that the mercury was well over a 100 degrees. I don't know what I was thinking, but I really wanted cobbler that particular evening.

This recipe has been dancing around in my head for the last two months. Back in June I was invited by White Lily and Martha White to attend their "Southern Baking Retreat" in Nashville, TN. It was my first visit to Nashville and one of the most amazing experiences of my life.

I learned all about the history of White Lily Flour and Martha White. Two brands that I truly believe in and keep stock in my kitchen on a regular basis. While in Nashville we got to get our hands dirty and do a little baking in their kitchen.

Each of us were paired with a partner to do a "Mini Martha White Muffin Mix Challenge". Each team had to create a dish using one of the Martha White Muffin Mixes in about a hour and a half. There were so many mixes to choose from, but my partner, Brenda and I chose the Chocolate Chocolate Chip Muffin Mix. Who doesn't like chocolate, right?

Here we are hard at work creating our masterpiece LOL. We chose to make a banana split muffin dessert. We baked up the muffins and then cut each one of them in half. We added a fluffy filling consisting of a combination of cream, fresh chopped strawberries and strawberry jam swirled in.

To assemble our dish we added a dollop of cream filling on the bottom of each muffin. We placed each muffin top over the filling. Once plated we topped off each completed muffin with slightly melted hot fudge and second dollop of cream filling. We garnished with a few additional chopped strawberries and banana slices on the side to resemble a banana split.

That's our creation in the middle. I think it turned out beautifully and pretty darn good if you ask me. When I first initially looked at all the muffin mix varieties the Blueberry Cheesecake immediatly caught my eye. I kept imagining a yummy blueberry cobbler with a fluffy muffin like topping.

I told everyone as soon as I get home I'm going to create a cobbler using that blueberry muffin Mix. Well, folks I finally made it and oh my did it turn out fabulous!!!!! I was so excited, because it was just as delicious as I imagined.

Fresh Blueberries + 2 Blueberry Cheesecake Muffin Mixes = One Delicious Cobbler (well and a few other tasty ingredients)

I would of never thought to use a muffin mix to make a cobbler, but I'm so glad I did. For the filling I used fresh blueberries, sugar, cornstarch, lemon juice, lemon zest and a splash of vanilla extract. I mixed up two packets of Martha White's Blueberry Cheesecake Muffin Mix with one cup milk and poured it over the blueberry mixture.

Out of the oven came a beautiful fluffy cobbler that tasted delicious!!!!! I have to say this recipe is really simple, really comforting and the perfect ending to any meal. I hope you'll give it a try.

Easy Blueberry Muffin Cobbler

Filling:

Preheat oven to 375 degrees. In a large bowl add the blueberries, sugar, cornstarch, lemon juice, lemon zest and vanilla extract. Toss the mixture to coat and set aside.

Lightly grease a 2 quart baking dish with non stick baking spray. Add the blueberry mixture to the baking dish.

In a separate medium size bowl, stir together the muffin mixes and milk just until blended. Pour muffin mix evenly over berries and spread the batter to the very edge.

Sprinkle a teaspoon of sugar over the top of the batter before baking. Bake cobbler for 30 - 35 minutes or until a toothpick inserted comes out clean and the cobbler is bubbly around the edges.

Cool and serve with a scoop of vanilla ice cream or a dollop of whipped cream.

Cook's Note: If the top begins to brown too quickly cover with a piece of aluminum foil that has been spray with baking spray and continue baking.
