Easy Blueberry Coffee Cake
- 1 pkg. (18-1/4 oz.) yellow cake mix
- 1 c all-purpose flour
- 1 pkg. (1/4 oz) active dry yeast
- 2/3 c warm water (120-130 degrees)
- 2 eggs, lightly beaten
- 1 can (21 oz) blueberry
- 1/3 c cold butter
In a large bowl, combine 1-1/2 cups cake mix, flour, yeast and water until smooth. Stir in eggs until well blended. Transfer to a greased 13x9 baking dish. Gently spoon pie filling over top.
In a small bowl, place remaining cake mix, cut in butter until crumbly. Sprinkle over filling.
Bake at 350 for 35-40 mins. or until lightly browned. Cool on wire rack. Drizzle with Glaze.
Glaze
1 c confectioners sugar
1 T corn syrup
1-2 T milk
Combine confectioners sugar, corn syrup and milk to achieve desired consistency. Drizzle over cake
