Easter Egg Nests
How cute would these be on your Easter table? And so easy, they make up in no time. Don’t underestimate how many each person will eat though, because they’re that good and my guys eat 2 or 3 at a time…
Easter Egg Nests
Ingredients:
- 1 tablespoon butter + 4 teaspoons + 1 tablespoon
- 4 cups frozen hash browns-thawed
- 2 egg whites
- salt and pepper, to taste
- 1/2 cup onions- diced small
- 1 small red pepper-diced small
- 1 cup ham steak, breakfast sausage or bacon-cooked and diced small
- 2 cups cheddar cheese-grated
- 6 eggs
Directions:
Preheat oven to 475 degrees. Coat 6 nonstick jumbo muffin cups with the 1 tablespoon butter. In a large microwaveable bowl, melt the 4 teaspoons of butter. Add the hash browns, the egg whites and salt and pepper. Mix thoroughly and place 1/2 cup into each muffin cup, pressing into the bottom and up the sides of each cup. Bake 15 minutes.
Meanwhile, in a small skillet, melt the remaining butter and sauté the onion and red bell pepper until soft. Add in the your meat of choice, salt and pepper and cook until warm, stirring occasionally. Divided the mixture among the muffin cups, top with the cheese and bake for 2 minutes. Remove from the oven and crack 1 egg into each cup. Bake until whites are set about 8 to 10 minutes-watch carefully toward the end of the cooking time. Use an offset spatula to remove front he muffin cups.
