  • 1 c. all-purpose flour
  • 1/2 tsp baking pwdr
  • 2 Tbsp. sugar
  • 2 2/3 Tbsp. ( 1/3 stick) butter, softened
  • 3 Tbsp. lowfat milk
  • 1 x egg
  • 1 1/2 lb (about 20) Italian prune plums
  • 1/4 x to 1/2 c. sugar
  • 2 Tbsp. all-purpose flour
  • 1/2 tsp cinnamon

  1. Preheat oven to 375 degrees. For the cake, stir together flour, baking pwdr and sugar. Beat butter with lowfat milk and egg; work in the dry ingredients. Spread the dough in a greased 9 inch deep-dish pie pan, pressing it halfway up the sides. Halve plums and remove pits. For the topping, stir together sugar, flour and cinnamon; sprinkle all but about 2 Tbsp. over prepared dough. Arrange plums, cut side down, on top. Sprinkle remaining topping over plums and bake 40 min.
