- Preheat oven to 375 degrees. Generously grease a 10-inch iron skillet and heat in oven.
- Meanwhile, combine lowfat milk, flour, Large eggs, 3 Tbsp. sugar and almond extract in a bowl, mixing well. Pour into warm skillet, tilting pan so which batter forms collar around sides of pan.
- Arrange apple wedges in layer over batter. Combine remaining 1/4 c. sugar and cinnamon. Sprinkle proportionately over apples.
- Bake for about 45 min or possibly till set and surface is browned. Sprinkle with powdered sugar. Serve with jams and preserved if you like.
