- 14 oz dulce de leche
- 1 cup unsalted butter, softened
- 1 cup dark brown sugar, packed
- 4 eggs
- 2 t vanilla extract
- 1 cup buttermilk or sour cream (I used whole fat buttermilk)
- 1 T baking powder
- 1/2 t baking soda
- heaping 1/2 t salt
- 3 cups AP flour

,%20with%20certain%20healthy%20components%20present%20(do%20I%20have%20something%20green?%20Is%20there%20enough%20veggies?%20What%20about%20protein?)%20and%20with%20certain%20flavors%20avoided%20(ok%20in%20my%20case%20really%20just%20spicy%20heat;%20my%20kids%20are%20not%20picky).%20I%20love%20to%20cook%20(unlike%20exercise),%20but%20when%20something%20interrupts%20my%20dinner%20routine,%20it%20is%20hard%20for%20me%20to%20get%20back%20on%20track.%20Which%20is%20why%20you%20can%20expect%20to%20see%20more%20desserts%20around%20here%20for%20a%20while.%20Since%20my%20appendectomy%20I%20have%20also%20gotten%20a%20bad%20cold%20and%20between%20both%20issues,%20I%20pretty%20much%20stopped%20making%20super%20interesting%20meals.%20We%20have%20had%20tortilla%20soup,%20chicken%20divan,%20and%20a%20straight-from-my-childhood%20taco%20salad%20made%20with%20iceberg%20lettuce%20and%20un-spiced%20ground%20beef%20(which%20I%20actually%20love%20but%20am%20not%20sure%20is%20blog-worthy).%20I%20am%20hoping%20to%20get%20back%20on%20track%20soon%20(and%20start%20working%20out%20again),%20but%20until%20then,%20indulge%20your%20sweet%20tooth%20with%20me.%3C/p%3E%3Cp%3EPretty%20much%20anyone%20who%20does%20any%20kind%20of%20volunteer%20work%20for%20any%20reason%20would%20probably%20agree%20that%20volunteering%20will%20be%20much%20more%20successful%20if%20you%20can%20find%20something%20you%20enjoy.%20Which%20is%20why%20I%20currently%20am%20planning%20to%20volunteer%20to%20bake%20(or%20cook)%20for%20just%20about%20any%20reason%20that%20my%20daughter%E2%80%99s%20elementary%20school%20needs.%20I%20had%20my%20first%20opportunity%20this%20past%20weekend%20when%20the%20school%20had%20its%20carnival.%20I%20provided%202%20items%20to%20the%20Cakewalk%E2%80%93although%20now%20that%20I%20have%20experienced%20a%20cakewalk,%20I%20would%20not%20bake%20this%20cake%20for%20it%20again.%20The%20cake%20is%20perfectly%20delicious,%20but%20it%20was%20mostly%20little%20kids%20doing%20the%20cakewalk,%20and%20I%20am%20certain%20they%20had%20no%20idea%20what%20dulce%20de%20leche%20is%E2%80%93and%20my%20translation,%20provided%20on%20a%20piece%20of%20paper%20with%20ingredients%20for%20those%20with%20allergies,%20of%20%E2%80%9CArgentinean%20Milk%20Caramel%E2%80%9D%20probably%20did%20not%20help%20either.%20Plus,%20let%E2%80%99s%20face%20it,%20bundt%20cakes%20are%20beautiful%20in%20an%20elegant,%20restrained%20manner.%20They%20don%E2%80%99t%20compete%20with%20over%20the%20top%20desserts%20for%20little%20kids%20(nor,%20for%20that%20matter,%20did%20they%20compete%20with%20my%20pumpkin%20marshmallows,%20which%20were%20chosen%20early;%20stay%20tuned%20for%20the%20recipe).%20But%20for%20a%20grown-up%20occasion,%20or%20just%20a%20run%20of%20the%20mill%20weekend%20dessert,%20you%20cannot%20go%20wrong%20with%20this%20cake.%3C/p%3E%3Cp%3EI%20wondered%20how%20much%20you%20would%20be%20able%20to%20taste%20the%20dulce%20de%20leche%20after%20it%20was%20baked%20into%20the%20cake;%20the%20answer%20is%20you%20can%20definitely%20taste%20it,%20but%20in%20a%20mellowed%20out%20way.%20It%20is%20there,%20but%20unlike%20pure%20dulce%20de%20leche,%20it%20does%20not%20wollop%20you%20over%20the%20head%20with%20its%20intense%20caramelized%20sweetness.%20The%20bites%20with%20the%20swirled%20in%20dulce%20de%20leche%20are,%20of%20course,%20more%20intense.%20Those%20swirls%20also%20caused%20the%20cake%20to%20stick%20in%20places,%20so%20it%20is%20a%20toss%20up%20as%20to%20how%20I%20feel%20about%20the%20swirled%20part.%20Use%20a%20lot%20of%20baking%20spray%20is%20my%20best%20advice,%20I%20guess.%3C/p%3E%3Cp%3EYou%20will%20notice%20some%20comments%20in%20the%20recipe%20indicating%20I%20am%20not%20sure%20how%20large%20of%20a%20cake%20pan%20to%20use.%20This%20is%20because%20whoever%20copied%20the%20recipe%20for%20the%20website%20(where%20I%20got%20the%20recipe)%20clearly%20had%20a%20typo%20because%20they%20claimed%20you%20should%20use%20a%206%20cup%20or%20small%20bundt%20pan.%20Well%20I%20doubled%20the%20recipe%20and%20ended%20up%20with%202%2010-cup%20bundt%20cakes%20and%202%20mini%20loaves.%20So%20I%20am%20not%20positive%20the%20recipe%20makes%20enough%20for%20a%2012%20cup%20bundt%20pan,%20although%20I%20suspect%20it%20might,%20and%20so%20I%20have%20written%20the%20recipe%20for%20a%2010%20cup%20bundt%20pan%20with%20extra%20batter.%20Plus%20we%20all%20know%20the%2010%20cup%20pans%20are%20the%20prettiest!%3C/p%3E%3Cp%3EDulce%20De%20Leche%20Pound%20Cake%3C/p%3E%3Cp%3EPre-heat%20the%20oven%20to%20350%20F.%20Generously%20spray%20a%2010%20cup%20bundt%20pan%20(have%20some%20mini%20loaf%20pans%20handy%20in%20case%20you%20have%20extra%20batter%E2%80%93this%20recipe%20may%20or%20may%20not%20have%20been%20intended%20for%20a%2012%20cup%20bundt%20pan%E2%80%93if%20you%20linked%20to%20the%20recipe%20you%20will%20notice%20it%20claims%20a%206%20cup%20bundt%20pan%20which%20is%20definitely%20not%20right)%20with%20nonstick%20spray.%20Set%20aside.%3C/p%3E%3Cp%3EReserve%20approximately%201/4%20cup%20of%20the%20dulce%20de%20leche%20in%20a%20microwavable%20container%20and%20set%20aside.%3C/p%3E%3Cp%3EWhisk%20together%20the%20flour,%20baking%20powder%20and%20soda,%20and%20the%20salt.%20Set%20aside.%3C/p%3E%3Cp%3ECream%20the%20butter%20on%20medium%20low%20speed%20until%20smooth.%20Add%20the%20brown%20sugar%20and%20cream%20again,%20then%20add%20the%20bulk%20of%20the%20dulce%20de%20leche%20(all%20but%20the%201/4%20cup).%20Cream%20until%20it%20is%20smooth;%20scrape%20down%20the%20sides%20as%20necessary.%20Add%20the%20eggs,%20one%20at%20a%20time,%20blending%20after%20each%20one.%20Scrape%20down%20the%20sides%20as%20needed.%20Add%20the%20vanilla%20and%20blend%20it%20in.%20On%20the%20lowest%20speed,%20add%20the%20flour%20mixture%20and%20the%20buttermilk%20or%20sour%20cream,%20alternating,%20in%203%20additions%20for%20the%20flour%20and%202%20additions%20for%20the%20liquid.%20Blend%20until%20smooth%E2%80%93finish%20by%20hand,%20scraping%20along%20the%20sides%20and%20bottom%20of%20the%20bowl.%20Pour%20the%20batter%203/4%20of%20the%20way%20up%20the%20pan%20(i.e.,%20leave%20room%20for%20some%20batter%20on%20top).%20Heat%20up%20the%20reserved%201/4%20cup%20dulce%20de%20leche%20so%20that%20it%20pours%20easily.%20Drizzle%20the%20reserved%20dulce%20de%20leche%20onto%20the%20cake%20batter%20in%20the%20pan.%20Spoon%20the%20remaining%20batter%20into%20the%20pan%20(until%20it%20is%20full%E2%80%93do%20not%20overfill%20it;%20use%20mini%20loaves%20for%20extra%20batter).%20Place%20in%20the%20oven%20with%20a%20cookie%20sheet%20on%20the%20rack%20under%20it%20to%20catch%20any%20drips.%3C/p%3E%3Cp%3EBake%20for%2050-55%20minutes,%20until%20the%20cake%20begins%20to%20pull%20away%20from%20the%20sides%20of%20the%20pan%20and%20a%20cake%20tester%20comes%20out%20clean%20of%20batter%20(although%20it%20may%20have%20dulce%20de%20leche%20on%20it,%20so%20the%20pulling%20away%20from%20the%20sides%20of%20the%20pan%20is%20the%20better%20test%20in%20this%20case).%20Cool%20for%2015%20minutes%20and%20then%20turn%20out%20onto%20a%20cooling%20rack.%20Cool%20completely%20before%20slicing.%3C/p%3E){kind=link}
