Dulce de leche is a rich and sweet paste made with sugar and milk. The name translated to English means sweet of milk. The Dominican Republic is famous for its dulce de leche; you might buy it at any supermarket or local store all over the country. Dulce de leche is sometimes combined with guava, orange or grapefruit.
Dulce de leche, when in a liquid or soft stage, is also poured over desserts, ice cream, and used for cake filling. To use it as cake filling, the dulce de leche must be prepared somewhat soft and spreadable, sort of like a caramel or syrup.
Since I only use dulce de leche as cake filling, I find it easier to use just sweetened, condensed milk. Following is how I prepared my dulce de leche for cake filling.
