Cinco de Mayo is in a few short days which means it's time to break out all those Mexican & Tex Mex inspired dishes. Mexican food is one of my favorite cuisines and I have a pretty good assortment of recipes on the blog.
I have to admit I have a huge weakness for desserts, so it is no surprise that I'm sharing another sweet treat today. Walmart asked me to share a recipe in celebration of Cinco de Mayo, so I thought these delicious Dulce de Leche Fluff Brownies fit the bill perfectly.
Even if you don't celebrate Cinco de Mayo who needs and excuse to eat dessert. Especially when it's a ooey-gooey marshmallow chocolaty dessert. The brownie part of these bars is homemade, but to simplify this recipe you can also use a boxed brownie mix. Just make sure to purchase a mix for a 9x13 inch pan.
Dulce de Leche Fluff Brownies
Brownie ingredients:
- 6 - ounces unsweetened chocolate, coarsely chopped
- 1 - cup butter (2 - sticks)
- 2 - cups sugar
- 4 - eggs
- 2 - teaspoons Mexican vanilla extract
- 1 1/3 - cups all purpose flour
- 1/2 - teaspoon baking soda
- 1 - cup mini chocolate chips
- Topping:
- 1 - 13.4 - oz can Dulce de Leche (Mexican milk caramel found in the Latin isle)
- 1 - 7 oz jar marshmallow creme
- 1/2 - cup pecans, toasted
In a medium saucepan cook and stir unsweetened chocolate and butter over low heat until melted and smooth. Remove from heat; cool slightly. Meanwhile, preheat oven to 350 degrees F. Line a 13x9x2-inch baking pan with foil, extending the foil over edges of pan. Grease foil and set pan aside.
Stir sugar into chocolate mixture. Add eggs, one at a time, beating with a wooden spoon or wire whisk after each addition. Stir in vanilla. In a small bowl stir together flour and baking soda.
Add flour mixture to chocolate mixture; stir just until combined. Stir in semisweet chocolate pieces. Pour batter into the prepared baking pan, spreading evenly. Bake for 20 to 25 minutes or until edges are set and center is almost set.
Meanwhile, transfer dulce de leche to a small microwave-safe bowl. Microwave for about 30 seconds to 1 minutes or until softened, stirring once (you can use the dulce de leche in the squeeze bottle and omit the microwaving step).
Remove brownies from oven and set pan on a wire rack. Immediately spoon marshmallow creme in mounds on top of hot brownies. Drop spoonfuls of dulce de leche between mounds of marshmallow creme.
Let stand for a few minutes to soften. Using a table knife or narrow metal spatula, gently swirl marshmallow creme and dulce de leche together to marble. Sprinkle with pecans. Cool in pan on rack
Using the edges of the foil, lift uncut brownies out of pan. Cut into brownies, wiping knife as needed between cuts. Serve brownies the same day they are prepared
Cooks Note: If using a store bought brownie mix omit the homemade brownie ingredients and just add the chocolate chips to the batter. Proceed with the recipe for the topping.
Recipe yields: 24 brownies depending on the size

I found everything I needed at my local Walmart. Keep in mind if a homemade brownie recipe intimidates you, a store bought brownie mix can be substituted.
I have included some step step photos of how easy these brownies came together. I'm big fan on not wasting anything, so I just used the wrapper from the butter to grease the foil for the brownie pan.
This recipe is really easy and only takes one saucepan and a mixing bowl. Or just one large pot.
Pour the batter into the pan and bake. Spread on the marshmallow cream and swirl in the Dulce de Leche.
