I just love cookies during this Christmas season. Dream cookies is my second cookie recipe which I believe you will enjoy preparing (the other is my own GHP Peanut butter cookies). It is simple; requires few ingredients and tastes, for lack of a better word, absolutely dreamy. You will definitely have to sit down and take your time to savour this one. Don’t hog it down in one bite, but rather close your eyes and take one nibble, then another and let the flavours tickle your taste buds.
Now, I’ve seen there are many versions of dream cookies. I guess it depends on the interpretation of how they believe a dream cookie should look like and taste. This version is light and crispy and kind of reminds me of those Danish butter cookies you get in the tins during Christmas.
It takes about 25 minutes to bake and is golden brown in colour when done. I placed a whole almond on the top of each cookie, though I agree a sort of jam could also be placed on the top of the cookie as well.  This is where I’ll leave it up to your creativity. This cookie has a unique taste, due to the coffee liqueur I included in the batter. You can use amaretto, or any other liqueur, instead if you like as well.  However, the texture and the taste is out of this world; you will not be disappointed. So pinch yourselves, wake up and get a taste of these cookies. And no, you’re not dreaming. This recipe is for real lol!!
So without much ado, here is Dream Cookies. Enjoy!!
 Dream Cookies Recipe
DREAM COOKIES
- 2 cups all purpose flour
- 1 tsp. baking powder
- 1 cups butter, soften
- 3/4 cup sugar
- 2 tsp. vanilla extract
- 1 tbs. coffee liqueur or amaretto
- whole almonds
Sift together flour and baking powder. Set aside.
Beat butter, sugar, vanilla and coffee liqueur on medium speed, using a hand mixer, till light and fluffy.
Scrape the sides of the bowl frequently.
 Add dry ingredients to creamed mixture until blended and smooth.
Cover and chill in the refrigerator for 1 hour.
Remove from fridge after the hour and begin the next step at once.
Preheat oven to 300 degrees F.
Roll dough, into 1 inch balls. Place them 2 1/2 inches apart on an unbuttered baking sheet.
Note: Do not grease the sheet.
Gently press an almond in the top of each ball.
Bake for 25 minutes or until golden brown.
Cookies will be light and crisp. Cool on wire racks and store in an airtight container.
