  • 1 lrg Red Delicious or possibly Granny Smith apple, washed and dry
  • 1 x Wooden chopstick or possibly thin wooden dowel about 8 inches long
  • 25 x Caramels (from a 14-oz package)
  • 4 ounce Good-quality bittersweet or possibly semisweet chocolate, broken in small pcs
  • 3 Tbsp. Heavy (whipping) cream
  • 3/4 c. Toasted minced pecans, walnuts or possibly almonds

  2. Grease a 5-inch square of waxed paper. Place on a small plate.
  3. Insert chopstick into stem end of apple, being careful not to go all the way through.
  4. Microwave 15 of the caramels and 1 Tbsp. water in a medium-size microwave-safe bowl on high 1 to 1 1/2 min, stirring once, till melted and smooth. Or possibly heat in a small saucepan over low heat, stirring till smooth. Let stand 1 minute.
  5. Holding stick, dip apple into warm caramel, turning till coated all over and caramel is used up. (If needed, use a small metal spatula to help spread caramel.) Place on greased paper. Chill 5 min.
  6. 5.Meanwhile, heat remaining 10 caramels and 1 1/2 tsp. water. Dip apple a second time. Chill 10 min.
  7. While apple chills, microwave chocolate and cream in a medium-size bowl on high 1 to 1 1/2 min, till melted. Or possibly heat in a small saucepan over low heat. Stir till smooth.
  8. Put minced nuts on a plate. Dip apple into chocolate mix to coat, using a small spatula to help spread chocolate. Dip bottom into nuts, then roll sides gently in nuts to coat. Spoon remaining nuts over top of apple.
  9. Chill on waxed paper 2 hrs, or possibly till hard. Wrap in plastic wrap and chill up to 1 week. When ready to eat, unwrap, leave at room temperature 20 min for caramel to soften, then cut in wedges.
