Did you have any idea that you could use avocado to make brownies? I didn’t, until I saw this recipe and became totally inspired.

Just so you know, you will not taste the avocado at all but it’s a great way to lighten up your brownies (plus add some healthy fats).

These brownies are almost custard like but still rich and fudgey.

I like adding an extra sprinkle of chocolate chips to the top because, well, do I really need to explain why? It makes them extra gooey with just the right amount of chocolateness (is that even a word?) in every bite.

These brownies are great for lunch boxes or as a late afternoon snack with a cup of coffee. They also freeze well if you want to make them last the haul.

Double Chocolate Avocado Brownies

Yield: Makes 9 brownies

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Ingredients:

Directions:

Preheat oven to 350 and grease an 8x8” baking dish.

In a food processor or blender, combine; avocado, banana, maple syrup, and vanilla.

Transfer to a large bowl and add in eggs, coconut flour, cocoa powder, sea salt, and baking soda until combined.

Pour mixture into the greased baking dish and sprinkle with chocolate chips.

Bake for about 25 minutes.

Allow to cool and enjoy!
