%20but%20I%20was%20thinking%20about%20it%20again%20this%20week%20with%20our%20First%20Day%20of%20Spring%20Snow.%3C/p%3E%3Cp%3EThis%20recipe%20hails%20from%20another%20one%20of%20my%20awesome%20Christmas%20cookbook%20gifts%20-%20%20The%20Farm%20Chicks%20in%20the%20Kitchen!%20It%20is%20all%20kinds%20of%20fun%20and%20awesome.%20It%E2%80%99s%20full%20of%20down-home,%20comforting%20recipes%20and%20kitschy%20country%20crafts.%20I%20just%20love%20it.%20It%E2%80%99s%20too%20cute%20for%20words.%3C/p%3E%3Cp%3EWhat%20intrigued%20me%20about%20this%20recipe%20was%20the%20fact%20that%20soup%20portion%20and%20the%20creamy%20cheese%20sauce%20portion%20of%20the%20recipe%20are%20made%20separately,%20then%20mixed%20together,%20heated%20through%20and%20served.%20This%20is%20a%20different%20method%20than%20I%E2%80%99ve%20seen%20in%20the%20past%20and%20one%20I%20like.%20I%20avoid%20whole%20milk%20and%20heavy%20cream%20in%20cooking%20(baking/desserts%E2%80%A6that%E2%80%99s%20a%20different%20story)%20and%20will%20almost%20always%20try%20to%20finagle%20a%20way%20to%20use%20low-fat%20milk%20instead%20(1%25%20usually).%20I%20have%20found%20in%20the%20past%20that%20it%20works%20well%20in%20most%20applications.%20The%20one%20place%20it%20doesn%E2%80%99t%20work%20so%20well%20is%20if%20the%20milk%20mixture%20is%20cooked%20too%20long.%20Something%20happens%20to%20it%20%E2%80%93%20it%20breaks%20down,%20separates,%20curdles,%20SOMETHING.%20It%20changes%20the%20texture%20and%20makes%20it%E2%80%A6not%20good.%20This%20is%20what%20happened%20the%20last%20time%20I%20made%20soup%20with%20a%20low-fat%20milk%20base.%20General%20Fail.%3C/p%3E%3Cp%3EWith%20this%20method%20though,%20I%20was%20able%20to%20make%20the%20cheese%20sauce%20on%20the%20side,%20cooking%20the%20low%20fat%20milk%20until%20just%20thickened.%20Then%20I%20added%20my%20cheese%20to%20melt%20and%20stirred%20the%20whole%20thing%20into%20my%20pot%20of%20soup.%20Total%20time%20on%20the%20heat%20for%20the%20milk%20%E2%80%93%20about%2010%20minutes.%20It%20came%20out%20PERFECT.%20Creamy,%20cheesy%20and%20so%20delicious.%20I%20had%20some%20broccoli%20lying%20around%20that%20needed%20to%20be%20used%20up%20so%20I%20tossed%20that%20in%20there%20at%20the%20very%20end%20of%20the%20simmering%20time%20for%20the%20soup.%20No%20need%20to%20add%20that%20if%20you%20don%E2%80%99t%20have%20it%20or%20don%E2%80%99t%20prefer%20it.%20I%20also%20cooked%20up%20some%20bacon%20to%20crumble%20on%20top%20of%20each%20bowl.%20Again,%20just%20my%20preference.%20I%20like%20bacon.%3C/p%3E%3Cp%3ECHEESY%20POTATO%20SOUP%20(Recipe%20Adapted%20from:%20The%20Farm%20Chicks%20in%20the%20Kitchen%20by%20Teri%20Edwards%20&%20Serena%20Thompson)%3C/p%3E%3Cp%3EINGREDIENTS:%3C/p%3E%3Cp%3EDIRECTIONS:%3C/p%3E%3Cp%3EMake%20the%20soup:%20Melt%201%20tablespoon%20of%20the%20butter%20in%20a%20large%20pot%20over%20medium%20high%20heat.%20Add%20the%20carrots%20and%20cook%20until%20softened-about%204%20minutes.%20Add%20broth,%20potatoes,%20basil,%20salt,,%20and%20pepper.%20Bring%20to%20a%20boil,%20lower%20the%20heat%20and%20simmer%20for%20about%2020%20minutes%20(or%20until%20potatoes%20are%20tender).%20If%20using%20broccoli,%20add%20about%205%20minutes%20prior%20to%20the%20end%20of%20the%20simmering%20time.%3C/p%3E%3Cp%3EMake%20the%20cheese%20sauce:%20Melt%20the%20remaining%20butter%20in%20a%20medium%20saucepan.%20Stir%20in%20the%20flour%20and%20cook%20for%20about%201%20minute.%20Slowly%20whisk%20in%20the%20milk%20and%20simmer%20until%20slightly%20thickened%20%E2%80%93%20about%202%20minutes.%20Add%20the%20cheese%20and%20stir%20until%20melted%20and%20thoroughly%20combined.%20Gradually%20pour%20the%20sauce%20into%20the%20soup%20and%20stir%20until%20blended%20and%20heat%20through.%20Garnish%20each%20bowl%20with%20a%20crumbled%20bacon.%20Makes%206%20generous%20servings.%3C/p%3E%3Cp%3EENJOY!%3C/p%3E%3Cp%3EOne%20Year%20Ago:%20Amazing%20Slow%20Cooker%20Pork%20Tenderloin%20%E2%80%93%20super%20easy%20and%20so%20delicious!%3C/p%3E%3Cp%3EStrawberry%20Cheesecake%20Ice%20Cream%20%E2%80%93%20as%20good%20as%20it%20sounds!%3C/p%3E){kind=link}
