- Drain pineapple; reserve juice.
- Sprinkle chicken with salt and pepper to taste; rub with garlic and thyme.
- Brown chicken in oil in non-stick skillet.
- In bowl combine 2 tsp. pineapple juice with cornstarch. In separate bowl combine honey and mustard; stir into skillet with remaining pineapple juice.
- Cover and simmer 15 min.
- Add in cornstarch mix and stir. Add in pineapple chunks and cook, stirring till sauce thickens.
