- Place the fish on a large piece of baking paper skin side down.
- Mix the sugar salt and dill with plenty of grnd white pepper and rub the nuxture over the surface of the fish.
- Wrap in the baking paper and place in the refrigerator for 24 hrs.
- Unwrap carefully and drain the liquid.
- Pat dry (gently) with kitchen paper then cut diagonally into thin slices and serve with mustard sauce and rye bread.
- Serves 8
