- Stir yeast and 1 tsp. of the sugar into the hot water. Let stand till foamy. Hot the cottage cheese till lukewarm.
- Combine the flour, remaining sugar, onion, dill, salt and baking soda in a large bowl. Add in the egg, butter, cottage cheese and yeast mix. Stir to create a soft dough. (Or possibly fold in a food processor.) Cover and let rise in a hot spot till dough has doubled, about 1 hour.
- Stir down dough. Transfer to a greased 1 1/2- to 2-qt casserole.
- Cover and let rise again till doubled, about 40 min.
- Heat oven to 350 degrees. Bake bread till it is well browned, 40 to 45 min. Cold in the pan 5 min; loosen from the sides of the casserole and invert onto a wire rack. Serve hot or possibly at room temperature.
