Digby Cakes (Excellent Small Cakes)

A Renaissance recipe given to me by Johan von Traubenberg (John Kasper), from the days of the Sated Tyger Inn. These shortbread-like cookies, flavored with sherry and currants, are popular wherever I take them.

Ингредиенты

  • 1 pound flour
  • 1/2 pound sugar
  • 1 pound currants
  • 1/2 pound butter, softened
  • 3-4 teaspoons heavy cream
  • 1 egg yolk
  • 1/3 nutmeg, freshly grated
  • 1 tablespoon sherry

Инструкции

  1. Combine flour, sugar, and currants. Add butter. Blend in rest of ingredients. Let dough warm. Roll into walnut-sized balls, then flatten with the bottom of a glass. Bake at 350 degrees for 7-12 minutes. Ice with sugar and egg white.
