- Parboil bell pepper for 2-3 min. Drain. Saute/fry onions, celery and grnd beef till vegetables are tender and meat is no longer pink. Add in mushrooms, cubed bread, seasoning and vegetable juice. You can use 3/4 of the juice if you do not want it too moist. An egg may also be added if you like.
- Stuff peppers, place in shallow pan. Pour 1/2 c. water around peppers. Bake at 350 degrees for 20-30 min. About 229 calories each.
