- Toss flours, baking pwdr, baking soda, cinnamon, ginger and salt.
- In separate bowl, stir oil, sugar, Large eggs, pineapple juice and vanilla. Stir liquid in dry ingredients till smooth.
- Stir in carrots, raisins and pineapple.
- Bake in 350 degree oven in 9"x5"x2" loaf pan for 35 to 40 min till pick inserted in center of cake comes out clean. Cold in pan on rack for 1 hour. Cut into 1/2" slices. Serves 18.
