Do you like that rich flavor only chocolate can bring? I’m not talking about a slight richness, I’m talking about a richness so rich you can’t eat more than 2 squares at a time. I am a self proclaimed chocoholic and even I could not handle more than 1 piece of Giada’s Cinnamon-Chocolate Fudge. The recipe was super easy. Coat an 8×8 pan with butter and line with parchment paper. Stir together condensed milk, cinnamon and vanilla. Add in some chocolate chips and butter and then melt in a double boiler. Once melted, pour into the pan, sprinkle with some salt and refrigerate for at least 2 hours until hardened.

I ran home after work to make this fudge so I could make sure it was in the fridge before the LOST season premiere began. As the show went on, I became more and more eager to dig into the gorgeous fudge I had waiting for me in the fridge. Around 10 I finally got to cut it up and try a piece, but to my dismay it was so rich I couldn’t eat more than a piece. This fudge is so super rich it makes me think the ingredients need to be balanced out a bit. Maybe up the ratio of chocolate to condensed milk.

Either way I could be happy in the fact that it could’ve been made with the ingredients found in the kitchens of those in the Dharma Initiative.

I will be trying this again, but I think I will add in some other things to change it up a bit. Maybe some cayenne pepper to give it a bit more kick, maybe some espresso powder to bring out the chocolate flavor even more.
