  • 1 pound self-rising flour
  • 1 teaspoon salt
  • 4 ounce. butter
  • 2 ounce. sugar
  • 1 c. lowfat milk

  1. Sift flour and salt into a bowl. Rub in butter till mix resembles fine bread crumbs. Add in sugar and mix to a soft dough with the lowfat milk. Turn onto a lightly floured surface, knead quickly, then roll out to 1/2 inch thickness. Cut into 20 rounds with a 2 1/2 inch cutter.
  2. Place scones on greased baking trays and brush tops with beaten egg or possibly lowfat milk. Bake in a very warm oven at 450 degrees for 8 to 10 min. Cold on wire rack. When cool, split and serve with strawberry preserves and whipped cream. This is an English recipe. Makes 20 scones.
