%20is%20the%20humble%20devilled%20egg.%20%20Now%20it%20turns%20out%20that%20devilled%20eggs%20were%20being%20served%20as%20far%20back%20as%20Ancient%20Roman%20times%20and%20it%20seems%20that%20just%20about%20every%20country%20that%20has%20chickens,%20has%20a%20recipe%20for%20their%20own%20version%20of%20devilled%20eggs.%3C/p%3E%3Cp%3ENow%20I%20had%20never%20experienced%20a%20devilled%20egg,%20even%20though%20I%20knew%20they%20had%20been%20popular%20in%20this%20country%20at%20one%20time.%20%20I%20was%20intrigued.%3C/p%3E%3Cp%3EPhoto%20by%20Morgan%20Davies-ScorerEggs%20are%20one%20of%20my%20very%20favourite%20foods.%20%20I'm%20well%20known%20for%20declaring%20that%20%22you'll%20never%20be%20hungry%20with%20an%20egg%20in%20the%20house%22,%20such%20is%20my%20confidence%20in%20the%20little%20lovelies.%20%20Son%20and%20heir%20is%20also%20partial%20to%20an%20egg,%20but%20with%20hubby%20we%20have%20to%20be%20careful%20as%20he%20is%20quite%20obviously%20on%20the%20allergic%20side%20of%20sensitive%20as%20regards%20them.%20%20Consequently,%20making%20devilled%20eggs%20has%20never%20been%20top%20of%20my%20list.%20%20Until%20this%20Christmas%20when%20I%20couldn't%20stand%20not%20knowing%20any%20longer%20and%20decided%20to%20make%20some.Photo%20by%20Morgan%20Davies-ScorerOkay,%20so%20now%20I%20understand%20the%20attraction.%20%20Obviously,%20you%20have%20to%20like%20all%20the%20component%20parts%20of%20a%20hard%20boiled%20egg%20to%20appreciate%20them.%20%20That's%20no%20problem%20for%20me,%20I%20used%20to%20take%20a%20hard%20boiled%20egg%20to%20school%20for%20my%20playtime%20snack%20(feel%20sorry%20for%20my%20classmates,%20some%20of%20those%20eggs%20were%20quite%20whiffy!).%20%20There's%20something%20so%20moreish%20about%20the%20rich%20unctuousness%20of%20the%20filling.%20%20The%20savoury%20yolk,%20mixing%20with%20the%20creamy%20mayonnaise,%20tangy%20vinegar,%20mustardy%20warmth,%20buttery%20richness%20and%20the%20final%20hit%20of%20enlivening%20chilli%20from%20the%20hot%20sauce,%20all%20encased%20in%20the%20coolness%20of%20the%20set%20egg%20white.%20%20Oh%20and%20a%20quick%20word%20about%20the%20Mic's%20Chilli%20%22Of%20Foam%20&%20Fury%22%20hot%20sauce.%20%20Because%20it%20has%20a%20degree%20of%20India%20Pale%20Ale%20as%20an%20ingredient,%20it%20added%20an%20interestingly%20hoppy%20angle%20to%20the%20end%20flavour.%20%20I%20recommend%20it!%20%20A%20devilled%20egg%20is%20so%20simple%20-%20and%20as%20with%20all%20things%20simple,%20so%20good.%3C/p%3E%3Cp%3EI%20might%20have%20come%20late%20to%20this%20particular%20party,%20but%20I%20can%20see%20I%20shall%20be%20making%20up%20for%20lost%20time%20where%20devilled%20eggs%20are%20concerned.%20%20I%20wonder%20if%20I've%20time%20to%20put%20a%20couple%20on%20to%20hard%20boil%20now%20....%3C/p%3E%3Cp%3EDEVILLED%20EGGS%20%20%20(makes%208%20halves)%3C/p%3E%3Cp%3EIngredients%20:%3C/p%3E%3Cp%3Ecayenne%20pepper%20and%20fresh%20parsley,%20to%20garnish.%3C/p%3E%3Cp%3EMethod%20:%3C/p%3E%3Cp%3ECut%20each%20egg%20in%20half%20lengthwise%20(trying%20to%20achieve%20bisecting%20the%20yolk%20in%20each%20case).%3C/p%3E%3Cp%3EGently%20scoop%20out%20the%20yolk%20into%20a%20bowl,%20leaving%20the%20white%20intact.%3C/p%3E%3Cp%3ETake%20a%20super-fine%20slice%20from%20the%20underside%20of%20the%20egg,%20so%20that%20it%20will%20stand%20straight%20on%20a%20plate,%20then%20reserve.%3C/p%3E%3Cp%3EBreak%20the%20yolk%20down%20into%20a%20powder%20with%20a%20fork%20and%20add%20all%20the%20ingredients%20other%20than%20the%20cayenne%20and%20parsley.%3C/p%3E%3Cp%3EMix%20gently%20until%20all%20is%20well%20combined%20and%20you%20have%20a%20fairly%20smooth%20consistency.%3C/p%3E%3Cp%3EEither%20fill%20a%20piping%20bag%20with%20the%20mixture,%20or%20spoon%20the%20mixture%20carefully%20into%20the%20empty%20egg%20whites.%20%20Make%20sure%20you%20gain%20some%20height%20with%20the%20filling.%3C/p%3E%3Cp%3ESprinkle%20each%20with%20a%20tiny%20pinch%20of%20cayenne%20and%20garnish%20with%20a%20parsley%20leaf.%3C/p%3E%3Cp%3ERefrigerate%20if%20the%20eggs%20are%20going%20to%20have%20to%20wait%20to%20be%20served.%3C/p%3E){kind=link}
