Not only is it a cheap meal, it can be so flavorful just by changing up what you add to the filling. This would make for a wonderful addition to your Memorial Day Feast! Deluxe Twice-Baked Potatoes

Preheat the oven to 450 degrees. Rub the potatoes with vegetable oil and put them on a baking sheet. After pricking with a fork, bake for about 1 hour or until tender. Meanwhile mix the other ingredients together (keeping a little of the bacon aside for topping) in a large mixing bowl and set aside.

When the potatoes are done, let them cool slightly (leave the oven on). Slice the top third of each potato and carefully scoop out the flesh into the bowl with the mixings. Scoop out the potato from the top third, and add that to the bowl as well. Keep the skin for potato snacks or discard the tops. Mix the potato along with all the fixings well. Stuff the potato skins with the filling, mounding any extra on top. Top with the reserved bacon crumbles. Return the potatoes to the baking sheet and bake for an additional 15 minutes or until heated through.
