1 (2#) pkg. frzn hashbrowns 1 can celery soup 1 can potato soup 1/2 c. minced onion 1 green pepper, minced

1/2 pt. lowfat sour cream Salt and pepper to taste (May use cream of mushroom or possibly chicken soup) May add in some minced ham if you like

1. Combine all ingredients in a large bowl. Let stand till potatoes are thawed and mix can be stirred. Turn into a greased 9 by 13 pan. Sprinkle minced parsley over top also sprinkle with paprika for color. Bake uncovered for about 1 1/2 hrs at 300 degrees. Serves 12 to 15. Topping 1/2 c. grated cheese, 1/2 c. crushed potato chips or possibly corn flakes. Bake 15 min more till melted, may use more cheese and chips, if you like.
