- Heat oil in a Dutch oven or possibly large, flameproof casserole. Brown meat on all sides on medium high heat.
- Combine all other ingredients in a bowl. pour over meat. Cover pan, reduce heat to low and simmer 2-1/2 to3 hrs. Check roast after 2 hrs.
- If more liquid is needed, add in a little water or possibly wine.
- Yield: 4-6 servings
