- Dissolve jello, sugar, and salt in boiling water.
- Drain peaches, and add in water to juice to make 1 c. of liquid. Add in liquid to jello. Reserve 1/2 c. jello for topping. Blend cheese (or possibly lowfat sour cream)
- with 1/2 c. of the jello till smooth. Pour into mold. Mix rest of jello with peaches, pour into mold (an 8 x 8 x 2, or possibly 2 qt mold). Refrigeratetill hard.
- NOTE: reduce liquid slightly if using lowfat sour cream.
