Date Night Truffles
Do you ever have a “date night” with your significant other? We do on occasion and it seems that they have become far and few between. We used to do “Friday Night at the Movies” where we would watch a Netflix movie and I would make a platter of appetizers. We would uncork a bottle of bubbly and have a wonderful romantic evening at home.
So, I bet you are thinking, how wonderful that the hubby and I finally had a long overdue date night. You are probably expecting to read a romantic story about my Date Night Truffles.
But, the truth is…
Date Night Truffles

Serves: 24
Ingredients
- 1 cup pitted dates
- ¾ cup unsweetened coconut flakes
- 1 cup walnuts
- 2 Tablespoons honey
- ¼ teaspoon salt
Directions
In the bowl of a food processor combine dates,coconut flakes and walnuts.
Process until finely chopped and sticking together.
Add the honey and salt, and pulse until it forms a thick paste, about 1 minute more.
Roll into balls using your hands. Roll balls in desired topping and place on a plate. Let truffles chill in refrigerator for 30 minutes before serving.

Then I read the content rules.
Um, read the rules first next time. The contest wanted you to use the GRILL.
But of course, I had to make the truffles anyway, I had all the ingredients. So an impromptu Date Night emerged.
So yummy,and sinfully delicious. But not sinful. Healthy, and tasty. My favorite were the chocolate dipped one. I made ones with cocoa powder, sesame seeds, crystallized sugar and, candy coated truffles.
