- 2 TBS butter
- 4 -6 TBS fine, dry breadcrumbs
- 4 (1 oz) squares unsweetened chocolate
- ½ cup mini chocolate chips
- 1 cup strong coffee
- 1 cup butter, softened
- 2 cups sugar
- 4 eggs
- 3 ½ cups all-purpose flour
- 4 tsp baking powder
- 2 ¼ tsp pumpkin spice mix
- 1 cup milk
- 2 tsp vanilla

%20so%20I%20started%20weeding%20through%20my%20cookbooks.%20Years%20ago%20I%20had%20a%20subscription%20to%20Southern%20Living%20Annual%20Recipes.%20Honestly%20I%20don%E2%80%99t%20remember%20when%20I%20started%20but%20this%20annual%20is%20one%20of%20my%20faves.%3C/p%3E%3Cp%3EThis%20book%20is%20literally%20coming%20apart%20at%20the%20seams%20but%20I%20refuse%20to%20let%20it%20go.%20My%20adaptation%20of%20Chocolate%20Truffle%20Cake%20came%20from%20this%20book%20and%20lots%20of%20others.%20Now%20I%20have%20new%20gem%20from%20this%20year,%20Dark%20Mocha-Chocolate%20Cake%20and%20of%20course%20I%20gave%20it%20a%20tweak%20or%20two.%20I%20doubled%20the%20recipe,%20(except%20for%20the%20unsweetened%20chocolate)%20added%20mini%20chocolate%20chips%20and%20added%20a%20healthy%20dose%20of%20pumpkin%20spice%20mix.%20Rather%20than%20the%20Cinnamon%20Cream%20Frosting%20that%20was%20suggested,%20I%20made%20a%20Pumpkin%20Buttercream%20courtesy%20of%20NancyCreative.%3C/p%3E%3Cp%3EIt%E2%80%99s%20good,%20it%20tastes%20like%20fall,%20and%20it%E2%80%99s%20worth%20every%20calorie.%20Try%20it.%20Please%20and%20thank%20you.%3C/p%3E%3Cp%3EGrease%20two%20eight-inch%20pans%20with%202%20TBS%20butter%20and%20sprinkle%20with%20breadcrumbs.%20I%20was%20a%20little%20gun%20shy%20about%20the%20cakes%20sticking%20so%20I%20gave%20the%20pans%20a%20spritz%20of%20non-stick%20spray.%3C/p%3E%3Cp%3ECombine%20unsweetened%20chocolate%20and%20coffee%20in%20the%20top%20of%20a%20double%20boiler;%20bring%20water%20to%20a%20boil%20and%20then%20reduce%20heat%20to%20low%20until%20the%20chocolate%20melts.%20Set%20aside%20to%20cool%20for%20at%20least%2015%20minutes.%3C/p%3E%3Cp%3ECream%20butter%20and%20gradually%20add%20the%20sugar%20and%20beat%20until%20light%20and%20fluffy,%20approximately%205%20minutes.%20Add%20eggs%20one%20at%20a%20time%20beating%20well%20after%20each%20addition.%20Add%20cooled%20chocolate%20mixture%20and%20beat%20well.%20Don%E2%80%99t%20be%20alarmed%20if%20mixture%20appears%20curdled,%20it%20will%20be%20OK.%3C/p%3E%3Cp%3ESet%20aside%202%20TBS%20of%20the%20flour%20for%20later.%20Sift%20together%20the%20rest%20of%20the%20flour%20baking%20powder%20and%20pumpkin%20spice%20mix.%20Add%20to%20creamed%20mixture%20alternately%20with%20milk%20at%20low%20speed,%20beginning%20and%20ending%20with%20flour.%20Scrape%20sides%20of%20bowl%20if%20needed.%20In%20a%20small%20bowl%20toss%20mini%20chocolate%20chips%20with%20reserved%20flour.%20This%20helps%20to%20keep%20them%20from%20sinking%20to%20the%20bottom%20of%20the%20pan%20while%20baking.%20Fold%20them%20and%20any%20flour%20that%20doesn%E2%80%99t%20stick%20to%20them%20by%20hand%20into%20the%20batter,%20just%20until%20combined.%3C/p%3E%3Cp%3EPour%20batter%20into%20prepared%20pans%20and%20Bake%20at%20350%C2%B0%20for%2035-40%20minutes%20or%20until%20cake%20tests%20done.%20Cool%20in%20pans%2010%20minutes%20and%20then%20remove%20from%20pans%20and%20let%20them%20cool%20completely%20on%20a%20wire%20rack.%3C/p%3E%3Cp%3EI%E2%80%99m%20going%20to%20send%20you%20right%20to%20NancyCreative%20for%20the%20buttercream%20recipe.%20When%20you%20make%20it%20do%20your%20best%20not%20to%20sample%20too%20much.%20Unfortunately%20tasting%20calories%20add%20up.%20I%E2%80%99ll%20meet%20you%20at%20the%20gym%20just%20let%20me%20know%20what%20time%20you%E2%80%99re%20going!!!%3C/p%3E%3Cp%3EIf%20you%20haven%E2%80%99t%20had%20the%20chance%20yet%20please%20check%20out%20my%20new%20blog%20Around%20My%20Table,%20thankum!!!%3C/p%3E%3Cp%3EThese%20are%20the%20linky%20parties%20I%20participate%20in.%20Drop%20by%20and%20show%20them%20a%20little%20love!%3C/p%3E%3Cp%3EWow%20us%20Wednesday%E2%80%99s%3C/p%3E%3Cp%3ETablescape%20Thursday%E2%80%99s%3C/p%3E%3Cp%3EOpen%20House%20Thursday%3C/p%3E%3Cp%3EUnder%20the%20Table%20and%20Dreaming%3C/p%3E%3Cp%3EEveryday%20Home%3C/p%3E%3Cp%3EA%20Stroll%20Thru%20Life%3C/p%3E){kind=link}
