- Preheat Oven 375 degrees:
- Sift flour, salt and baking soda into a bowl. Add the butter, cut into small pieces, and rub in using your fingertips.
- Add the sugar, egg, almond extract, crumbled chocolate and mix to form fairly firm dough.
- Turn on to a lightly floured surface and roll into a cylinder about, 9 inches long. Cut the dough into rounds and arrange them on a prepared baking sheet, leaving a little space between each one.
- Bake cookies for 10 – 12 minutes, until lightly golden around the edges. Leave on the baking sheets for 5 minutes, then transfer to wire rack to cool.
