It's dreary and drippy outside. The winter chill has subsided, but the rising temperatures, paired with the remaining snow, have given way to lingering fog. With the sun hiding behind persistent clouds, it's downright murky out there. But, it's perfect weather for one-dish comfort foods like creamy risotto. So, this month's Daring Cooks challenge was a fitting project.
Since we've made risotto before, we figured we had to find a way to bring new life to an old favorite. But how?

%20with%20some%20of%20the%20beer's%20flavor.%20%20It%20would%20offer%20up%20a%20subtle%20bitterness,%20a%20bit%20of%20sweetness,%20and%20a%20depth%20that%20you%20just%20wouldn't%20get%20from%20adding%20white%20wine.%20%20It%20would%20also%20complement%20the%20corned%20beef%20stock%20we'd%20be%20using.%3C/p%3E%3Cp%3EWe%20stirred%20the%20rice%20until%20the%20foam%20had%20subsided%20and%20the%20beer%20had%20absorbed%20fully%20into%20the%20grains%20of%20arborio.%20%20Then,%20we%20began%20adding%20our%20stock.%20%20When%20I%20make%20risotto,%20I%20like%20to%20set%20a%20timer%20for%20about%2020%20minutes%20right%20around%20the%20time%20I%20add%20the%20first%20ladle-full%20of%20stock.%20%20That%20gives%20me%20a%20gauge%20of%20when%20the%20risotto%20should%20be%20done.%3C/p%3E%3Cp%3EWe%20continued%20to%20add%20stock%20until%20there%20was%20about%20a%20cupful%20left%20in%20the%20sauce%20pan.%20%20At%20this%20point,%20the%20timer%20had%20gone%20off,%20and%20the%20grains%20of%20rice%20were%20still%20al%20dente.%20But,%20they%20had%20expanded%20to%20almost%20twice%20their%20size%20and%20were%20swollen%20with%20the%20flavor%20of%20the%20stock.%20%20At%20this%20point,%20we%20added%20the%20corned%20beef%20and%20the%20sauerkraut.%3C/p%3E%3Cp%3EWe%20also%20added%20the%20last%20of%20the%20stock.%20%20We%20gave%20everything%20a%20good%20stir,%20and%20then%20added%20the%20grated%20Gruyere%20cheese.After%20stirring,%20we%20noted%20that%20the%20risotto%20was%20quite%20creamy%20and%20luscious.%20%20It%20definitely%20didn't%20need%20to%20be%20finished%20with%20any%20additional%20cream%20or%20butter.%20%20So,%20we%20spooned%20it%20up%20into%20bowls.Even%20the%20smell%20of%20the%20risotto%20was%20intoxicating%20--%20meaty%20and%20hearty,%20with%20the%20perfume%20of%20caraway%20seed,%20the%20sweetness%20of%20the%20stout,%20and%20the%20slightly%20sour%20overtones%20of%20the%20saurkraut.%20%20One%20bite%20told%20us%20that%20reuben%20risotto%20was%20a%20pretty%20fantastic%20idea.%3C/p%3E%3Cp%3ECorned%20Beef%20Brisket%3C/p%3E%3Cp%3EReuben%20Risotto%3C/p%3E%3Cp%3EThe%202010%20March%20Daring%20Cooks%20challenge%20was%20hosted%20by%20Eleanor%20of%20MelbournefoodGeek%20and%20Jess%20of%20Jessthebaker.%20They%20chose%20to%20challenge%20Daring%20Cooks%20to%20make%20risotto.%20The%20various%20components%20of%20their%20challenge%20recipe%20are%20based%20on%20input%20from%20the%20Australian%20Masterchef%20cookbook%20and%20the%20cookbook%20Moorish%20by%20Greg%20Malouf.%3C/p%3E%3Cp%3EAnd%20don't%20forget%20to%20check%20out%20all%20the%20other%20great%20Daring%20Cooks%20Risotto%20challenges%20at%20Daring%20Cooks%E2%80%99%20blogs!%3C/p%3E%3Cp%3E%C2%A9BURP!%20Where%20Food%20Happens%3C/p%3E){kind=link}
