Daikon, Carrot and Gypsy Pepper Slaw
I love kitchen sink dishes. It where you get to throw a bunch of ingredients together and hope and pray for a great outcome.
I get a little crazy at the grocery store sometimes and just pick up things and put them in my basket with no rhyme or reason. That’s what happened with the diakon. I never bought one before. Yes, I actually have tasted it before.
So in the shopping cart it went and viola’ I made Diakon, Carrot and Gypsy Pepper Slaw.
The carrots and the gypsy pepper were part of my CSA basket this past week.
Daikon, Carrot and Gypsy Pepper Slaw

Serves: 4
Ingredients
- 1 Small Daikon
- 2 Carrots
- 1 Gypsy Pepper (bell peppers are fine too)
- ½ Tablespoon black sesame seeds (regular are fine too)
- 1 Teaspoon sesame oil
- 1 Tablespoon mirin
- 1 Tablespoon Rice Wine Vinegar (I used Light)
- 1 scallion, thinly sliced
- cilantro leafs as garnish
Directions
Using a julianne slicer, julianne the carrots, diakon, and pepper.
Place the vegetables and sesame seed in a bowl and combine. Set aside
In a small pan, add the oil, mirin and wine vinegar and heat about 2 to 3 minutes to blend the flavors
Pour the dressing over the veggies and serve with a bit of cilantro and chopped scallions.

Now my good friends at Foster Farms sent me free coupons to try their new oven ready chicken products.
One of the varieties they sell is the Thai Chicken. So I grabbed that one and popped it in the oven. And 30 minutes later dinner was done. The diakon slaw made an excellent side or salad. Oh and by the way, the hubby loved the chicken and so did Mel. I loved the slaw and everyone was a happy camper.
I think I might have snuck in a little purple cabbage too
Sweet and tangy and a fun side dish to make too. So you see sometime crazy concoctions turn out great.
