Chicken preparation has a number of variations in India. Dahi chicken is one of them. This is a versatile preparation and can be found made in different styles in different Indian homes. This is the easiest and quick version of Dahi Chicken. Also the quantity of spices put in this recipe is less which makes it light and easy to digest.

Marinate the chicken well with beaten curd for about 4 hours or preferably overnight.

In a wok heat the oil. Add the ginger garlic paste once the oil is heated. Fry for a minuted and add the onion paste. Fry for about 5 minutes or till the onion is browned.

Next add the salt, sugar, pepper and red chilli powder. Mix well and add the marinated chicken and the curd. Give a good stir and mix the chicken pieces well. Continue stirring every one minute and cook covered in a slow to medium flame for 15 minutes or till all the water released by chicken id dried. Be careful if cooked for too long the gravy may stick to the bottom. To avoid this keep stirring occasionally.

Once the chicken is cooked through add about ½ cup water and mix well. Cook till the gravy comes to a boil. Sprinkle the garam masala powder. Mix well and serve hot.

This delicious chicken preparation goes well with any Indian flat bread like naan, Kulcha, paratha and more. if you are a rice lover, you can have it with Jeera rice or Bengali Pulao
