Daal Fritters or Parippuvada

Parippuvada is a popular tea time savoury snack in Kerala.
Its made of daal pulses , either Toor daal (Yellow Pigeon peas) or Chana daal ( Split chickpeas) , which can easliy be found in any Indian grocery store.
Its a really tasty and simple snack and a must try for all..hope u enjoy this !!

Ингредиенты

  • Toor daal / Chana daal - 1cup (soaked in water for 4-6hrs)
  • Onion - 1/2 large / 1medium ( finely chopped)
  • Green chillies - 4-5 or as per choice ( finely sliced)
  • Ginger - 1inch piece (finely chopped)
  • Curry leaves - 1sprig or 5-6 leaves ( cut lengthwise thinly)
  • Asafoetida powder - 1pinch
  • Salt - to taste
  • Red chilli powder - 1/2 tsp (optional)
  • Turmeric powder - 1/2 tsp (optional)
  • Oil - for deep frying

Инструкции

  1. Drain the water well from the daal thats been soaking for 4-6hrs.
  2. Using a grinder, coarsely grind the daal , by pulsing once or twice (make sure that the daal does not become too much ground)
  3. Mix the corasely ground daal with the chooped onions, green chillies, ginger, curry leaves, asafoetida powder and salt and mix well.
  4. I added some red chilli powder (for added spice) and turmeric powder (for some colour) too, but thats optional.
  5. Now use an icecream scoop to scoop out the mixture into small tennis sized balls and press them down, adjusting the sides so that no cracks form. (it should take the shape of a Cutlet or Crab cake for example)
  6. Heat oil in a pan for deep frying and once the oil temp reaches 350degress, place the daal cutlets into the oil.
  7. Turn it from time to time in the oil while frying until a nice mild brown color appears on the outside.
  8. The daal fritters will be crispy from the outside but nice and soft on the inside.
  9. Serve it hot with some ketchup or just a cup of sweet tea or coffee, its just perfect!!
