Ингредиенты

  • 4 x Asian eggplants, sliced 1/2" thick on bias
  • 2 Tbsp. Sesame oil
  • 1 Tbsp. Vegetable oil
  • 1/4 c. Soy sauce
  • 2 tsp Dark brown sugar
  • 1 1/2 c. Snow peas
  • 5 x Scallions, cut on bias in 1 1/2 inch long pcs
  • 2 x Red peppers, sliced thinly

Инструкции

  1. Heat a wok or possibly large non-stick skillet over medium high heat. Heat the oils and when almost smoking, add in eggplant and peppers. Cook for 4 min, till softened, and add in snow peas and scallions. Dissolve the sugar in the soy sauce, and add in to pan. Cook for 2 min and serve over rice.
