  • 6 Tbsp. Coriander seed
  • 1 tsp Anise seed
  • 1 tsp Cloves
  • 1 tsp Cumin seed
  • 1 tsp Fenugreek seed
  • 1 tsp Black peppercorns
  • 1 tsp Toasted mustard seed
  • 1 tsp Turmeric
  • 2 x Cloves garlic, minced
  • 1 lrg Onion, minced
  • 1/2 x Congo (or possibly habanero) pepper, seeds and stem removed, minced Water

  1. Toast the spices in a dry skillet over medium heat till they release their aromas, about 3 min, taking care not to burn them. Transfer to a food processor and add in the turmeric and remaining ingredients and process into a paste, adding water as needed. This paste will keep for about a week in the refrigerator.
